Vanilla Cupcakes

 


INGREDIENTS FOR VANILLA CUPCAKES:
►1 1/4 cups all-purpose flour
►1 1/4 tsp baking powder
►1/2 tsp salt
►1/2 cup unsalted butter softened
►3/4 cup sugar
►2 large eggs room temperature
►2 tsp pure vanilla extract
►1/2 cup buttermilk or plain kefir room temperature

These cupcakes are easy to master and you will be making bakery-quality cupcakes in no time.

In a medium bowl, whisk together dry ingredients: flour, baking powder, and salt.
In a second bowl (or bowl of your stand mixer), beat together softened butter and sugar on medium-high speed 5 minutes until thick and fluffy.
Beat in eggs 1 at a time, mixing to incorporate with each egg then blend in vanilla and scrape down the bowl.
Reduce mixer to medium speed and add the flour in thirds, alternating with adding the 1/2 cup buttermilk and beating well between additions.
Pour batter into 12 lined muffin tins, filling 2/3 full. Bake in the center of the oven at 350˚F for 20-23 minutes, or until a toothpick inserted into the center comes out clean. Let cool 5 minutes in the pan then remove cupcakes to a wire rack to cool completely.

Finding MI MANCHI uno

The Italian 'Mi manchi' means 'I miss you' in English.

-Finding MI MANCHI- is actually a documentary series which records how Vivi, the 'Little Girl with Big Dream' starts her cupcake shop all from scratch.

After teaching for some years, she finally decided to open a cupcake store in Hong Kong and name it Mi Manchi to remember her very special one.

The episode uno(one) tells how she looked for the location for her shop in Hong Kong Island with her friend, Hallie.

Hobgoblin Cupcakes



Ingredients
2 squares unsweetened baking chocolate
1/2 cup unsalted butter, softened
3/4 cup sugar or equivalent in stevia/agave
1 cup flour
1/4 cup cocoa powder
1/2 tsp baking powder
1 tsp espresso powder
1/4 tsp salt
1/3 cup egg whites
1 tsp vanilla
3/4 cup milk
1 package light cream cheese
2.5 tbs honey
2 kiwis
1/2 cup blueberries

1. Melt the chocolate in a double boiler or microwave
2. Mix the butter and sugar/stevia until creamy
3. Stir together the flour, cocoa powder, baking powder, espresso powder, salt
4. Mix together the milk, vanilla, egg whites
5. Add the butter mixture and egg mixture to the dry ingredients
6. Fill cupcake tins 2/3 of the way up and bake at 350 degrees for 10 min or until done.
7. Decorate with fruit and icing (see the video).

FAIRY CUPCAKES
75 grams butter
75 grams caster sugar
90 grams self-raising flour
1.5 eggs
1/2 tsp vanilla extract

Combine all the ingredients and beat until light and creamy. Divide the mixture evenly among 6 muffin cups. Bake at 350 degrees for 18 to 20 min, or until done. Draw fairy wings on top with icing (see video).

  • Big Bowl
  • Cupcake Liners
  • Cupcake Pan
  • Ladle
  • Spatula
  • Whisk

Goo Halloween Cupcake



INGREDIENTS
  • 1 - red velvet cake mix
  • 1/3 - veg oil
  • 1 1/3 - cup water
  • 3 - eggs
  • 1 - ready made chocolate frosting
  • 1 - ready made vanilla frosting
  • Green Food Coloring Dye
  • Festive food candy piece ideas
  • Festive Halloween sprinkles ideas
  • Foil cupcake baking cups
  • Baking sheet
  • Pastry bag w/tip
  • Electric Mixer
  • Small Pot
Blend, mix and bake according to the manufacturers instructions on box cake mix. Add 20 drops of food coloring to vanilla frosting and blend well. Pour icing into pastry decorating bag w/tip and fill cooled baked cupcakes by pressing in the top center and squeeze until the cupcakes puff up and icing oozes out. Melt the chocolate frosting over low heat and pour over cupcakes. Top with your favorite festive Halloween candies.

INGREDIENTS
  • For cupcake batter:
  • 1 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 1 egg
  • 2 eggwhites
  • 1/4 cup melted unsalted butter
  • 1/4 cup vegetable oil
  • 1 tsp vanilla
